Just when you thought Chicken Soup could not get any better! This old time favorite soup recipe uses Lahaina Burst from Lahiana Spice Company to give your chicken soup a boost of Hawaiian flavor.
Spicy Chicken Soup Ingredients
1 Prepared rotisserie chicken
1 Tablespoon olive oil
1 Teaspoon Lahaina Burst spice blend
1 Medium onion, thinly sliced
1/2 Cup sliced shiitake mushrooms
2 Quarts low-sodium chicken broth
2 Cups baby spinach
2 Scallions, thinly sliced
Lime wedges (for serving)
Spicy Chicken Soup instructions
Shred 4 cups of meat from chicken and place in a small bowl. Discard skin and bones from the chicken.
Over medium to high heat, warm oil in a large sauce pan. Add in the mushroom and onions. Cook mixture for 8 to 10 minutes stirring occasionally until soft and golden.
Add one teaspoon of Lahaina Burst.
Add shredded chicken, broth and bring to a boil.
Add spinach and divide soup among bowls.
Top with scallions and serve lime wedges alongside for squeezing over.
